Calcium Chloride (E509) is a salt of calcium and chlorine. It is used as a sequestrant and firming agent. Calcium chloride is one of the primary ingredients in direct spherification. It is used in the setting bath to activate the sodium alginate. Due to it’s extremely salty taste, it should not be used in reverse spherification. USES Food Calcium chloride is use in cheesemaking. How do I know if I need to use Calcium Chloride? Any milk that has been pasteurized and cold stored should have Calcium Chloride (CaCl) added. The reason for this is because the calcium originally in the milk slowly becomes soluble and cannot be used to form a firm curd. The exceptions are Mozzarella, Provolone and any other cheese that requires stretching at some point in the recipe. This is because the stretch depends on the calcium leaving the curd. Some fresh milks may need CaCl added if the curd is not firm enough due to poor calcium in the milk, caused by either season or poor diet. This information applies to both hard and soft cheeses. Aquarium It can be used in the reef aquarium hobby for adding bio-available calcium in solution for calcium-using animals such as snails, hard tube worms, and corals although the use of calcium hydroxide (kalkwasser mix) or a calcium reactor is the preferred method of adding calcium. However, calcium chloride is the quickest method to increase calcium levels as it dissolves readily in water.
